Our family loves this healthy twist on a fried rice. Add a side of protein and it's a full meal!
Family Favorite Fried Rice
30min prep + advance prep on rice
Ingredients (6-8 servings)
Gather the following:
1.5 T ghee
4 eggs
2-3 cups shredded carrots or 4-5 carrots to shred on your own
4 stalks celery
2 cups fresh snow peas or frozen peas
sea salt
pepper
4 cups cooked and chilled jasmine rice (prepare at least one day in advance)
4T coconut aminos
1T fish sauce (check that there's no sugar)
1tsp toasted sesame oil
Directions
Prepare all ingredients. This is a continual action recipe so you will need everything ready to go! Whisk eggs in a bowl and set aside. Dice celery into small pieces, about the size of a pea. Shred and measure carrots on the same cutting board. Rinse snow peas or measure the frozen peas. Locate a small prep bowl and add the coconut aminos and fish sauce. Set all prepared items aside.
Melt 1/2 T of the ghee in a cast iron skillet over medium heat. When the ghee is melted, add the whisked eggs. Stir, lightly scrambling. Transfer to a plate when done.
Melt the remaining 1T of ghee in the skillet. Add celery, carrot, peas, salt and pepper. Stir for 3-5 minutes until vegetables are crisp-tender.
Add the rice to the vegetable mixture, along with the pre-measured liquid ingredients in the prep bowl. Stir until mixed evenly, working at any rice clumps to ensure they are separated. Let the rice mixture cook for about 3 minutes, then stir. You may get some sticking to the bottom of the skillet and this is both okay and expected. Cook for about 3 minutes more until hot all of the way through. You may cook the mixture longer and allow more of a crust to form on the bottom of the pan. Watch closely though as it is easy to get too eager on the crunch and burn your creation.
Remove from heat, adding the sesame oil and stirring thoroughly. If any bits remain on the bottom of the skillet, they can be stirred again in about 5 minutes and the steam from the rice will loosen them right up!
Gather, set the day aside, refuel your body and soul. Enjoy!
